19th Century Balancing Syphon Brewer
This is a 19th-century Balancing Siphon Coffee Brewer. Using the vacuum created by bringing the water to high heat and pulling it through the coffee into a chamber where it is then served. Popular during the dessert course in the courts of Europe, the balancing siphon coffee brewer was brought out to the delight of the guests.
{The siphon brewer was invented in 1830 by Loeff in Berlin, although it was Mme. Vassieux of Lyons, France who patented the first commercially successful vacuum coffee brewer.}
